I prepare the lentils for some days in advance and keep them in the fridge.
Bring the lentils with the herbs to a boil in the water. Let simmer for about 15-20 minutes. Stir every so often. The lentils fall apart into a puree while cooking. Only at the end of the cooking time season with salt or soy sauce since legumes don’t cook soft otherwise. Let cool down and keep in the fridge until used.
