How to Cook Red Lentils

Makes about 3 Cups

Ingredients

1 Cup Red lentils (dry weight), about 220 g
2 Cups Water, equal to 500 ml
Some Savory and/or other Herbs
Some Salt or Soy Sauce

Preparation

I prepare the lentils for some days in advance and keep them in the fridge.

Bring the lentils with the herbs to a boil in the water. Let simmer for about 15-20 minutes. Stir every so often. The lentils fall apart into a puree while cooking. Only at the end of the cooking time season with salt or soy sauce since legumes don’t cook soft otherwise. Let cool down and keep in the fridge until used.

Puree of Red Lentils

Red lentils are actually brown lentils, only that they have been hulled. This makes them particularly quick to cook and they fall apart into a puree. If you use other lentils take care to puree them after cooking or mash them with a fork so that the hulls break up and they become digestible.
